I would get a temp gun or an aftermarket temp gauge and see what your readings are.

I am also going to back up Boris mentioning checking the OEM gauge.

Also, not to say you are an idiot, as I have done the same thing before, but are you sure the T-stat is facing the right direction?

guys, he tried without the t-stat and had the same problem. its not the t-stat.

I've kept my cool (pun intended) but mentally am getting annoyed at that question.

Yes, I do have the thermostat in the correct orientation.

Didn't really do much other than pull the hood off and steal the washer fluid pump.

The problem is that I wouldn't be all that surprised if that were the case.
Nope, that's not what it was. 

It was a pink bunny, just couldn't resist.

Pulled the thermostat to sanity check and it wouldn't get to temp. 
Put thermostat back in and it was running past 190 degrees after awhile, so it's certainly overheating. Not that this was news to me. 
Going to try a new expansion tank cap as it's the only thing that hasn't been replaced, and if that doesn't do the trick I'll probably just end up swapping motors. 

I did forget how much fun it was to drive.
