Honestly at that point I would buy a clean stock m42 and pop it in there quick. couldn't imagine it being expensive. certainly less than ruining a set of forged pistons.
I was thinking the same, find a temporary motor that eventually can be used for parts too.

honestly though M42's arent very sought after. I couldn't imagine it being more than a few hundred bucks for a clean one.

Sucks that you seem to have gotten the short end of the stick in this situation. I've been to Automotive Supply for things before and have never been impressed. After reading this, I'll make sure that no one I know will ever go there. Not acceptable. I don't think you should have needed to pay for any of that work. If anything, it seems like they should owe you.
I understand your unique situation and I'd just go with whatever feels best. Sounds like you've already made up your mind and I'd roll with it. Rebuild it later (if needed) when you don't have the opportunities that you do now.

Got the wiring all hooked up today. Turned the car on and heard that annoying door buzzer for the first time in months. All of the indicator lights and what-not seem to be functioning properly. The previous owner had run new wiring for the old fuel pump, but once I found the ground that wasn't connected, the original wiring worked fine. I jumpered the relay and ran the pump to flushed out the fuel line. Everything's looking good so far. I've still got some things I need to do, but if everything continues to go well I could be firing the car up tomorrow. Super stoked.
